Salaisons d’Anniviers’ IGP dried beef is an iconic alpine specialty, crafted in the heart of the Anniviers Valley in the Valais Alps.

Made from the finest, carefully selected cuts of Swiss beef leg, it embodies artisanal know-how passed down through generations.

Hand-salted traditionally, the meat is immersed for several weeks in a brine of salt and spices, before being slowly dried in the pure mountain air for approximately 10 weeks. This patient process develops a fine, melt-in-your-mouth texture and rich, delicately spiced aromas typical of the Valais region.

IGP (Protected Geographical Indication) certified, it guarantees controlled origin, 100% Swiss meat, and strict adherence to traditional methods. Naturally lean and rich in protein, it is an essential reference in Swiss alpine gastronomy.

Ideal for a Valais platter, a gourmet aperitif, or to accompany raclette or fondue. It pairs perfectly with a glass of Valais Dôle or Cornalin.
