Description
A traditional Swiss specialty crafted from carefully selected Swiss pork belly. From the heart of the Anniviers Valley, this dry-cured bacon is crafted using artisanal expertise passed down through generations.
Hand-salted with a blend of salt, spices, and aromatic herbs, it is then placed in brine before being slowly air-dried in the mountain air for several weeks. This process allows the bacon to lose part of its moisture and develop a texture that is both firm and melt-in-the-mouth, as well as a rich and delicately aromatic taste.
Unsmoked, as per Valais tradition, it retains all the purity of its flavors and the authenticity of the Alpine terroir.
Certified PGI (Protected Geographical Indication), it guarantees production in Valais using 100% Swiss meat and strict adherence to traditional methods.
An iconic product of Valais gastronomy, it is a staple of the Valais platter, alongside dried meat and raw ham.
